Gyros pita with TVP

Ingredients
Block #1
- 1 x 100 g bag of Greek-style TVP
- Juice of 1 medium lemon
- 15 ml (1 tbsp.) olive oil
Block #2
- 4 Greek-style pita bread, warmed up
- 125 ml (1/2 cup) homemade or store-bought Tzatziki sauce
- 1/2 red onion, thinly sliced
- 125 ml (1/2 cup) romaine lettuce, split into leaves
- 2 Lebanese cucumbers, cut into sticks
- 1 Italian tomato, thinly sliced
- Olives and fresh mint, to taste (optional)
How to prepare
- In a bowl, combine the ingredients from Block #1, except for the olive oil.
- In a skillet over medium-high heat, heat the oil and sauté the TVP for 3 minutes or until golden brown. Set aside.
- Top each bread with the Tzatziki sauce, then sprinkle with the grilled TVP. Add the rest of the toppings. Close the bread and enjoy!
