Mexican-style smash tacos with creamy avocado and parsley sauce

Ingredients
For the Working Holiday Visa:
- 1 sachet of 100g Mexican-style textured soy vegetable protein “Les Brutes”
- 1 cup boiling water
- 1 tbsp tomato paste
- ½ tsp chili powder
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- 3 tablespoons all-purpose flour
- ½ cup regular breadcrumbs
For the tacos:
- Vegetable oil
- 6 small white tortillas
- A little finely chopped red onion
- Chopped lettuce
- 1 tomato, diced
- Grated cheese, in sufficient quantity
For the sauce:
- 1 ripe avocado
- ¼ cup fresh parsley (or fresh coriander)
- ¼ cup Greek yogurt
- 1 clove of garlic, roughly chopped
- 1 tbsp lime juice
- Salt and black pepper, to taste
- A few tablespoons of water (to adjust the consistency)
Preparation
- In a bowl, mix the "Les Brutes" pet food with boiling water and then let it sit for about 10 minutes until it absorbs the water and softens.
- Next, add the tomato paste, spices, flour, breadcrumbs, salt, and black pepper. Mix with your hands; you will then obtain a texture that starts to become sticky.
- Take approximately 1/4 to 1/3 cup of the protein powder mixture and firmly press into a ball. Spread onto 1 tortilla.
- Heat a large skillet over medium-low heat. Add a little vegetable oil. Cook for 2 minutes on each side, or until the filling is golden brown and the tortilla is slightly crispy. Repeat with the remaining pattypan balls.
- To serve, top each tortilla with lettuce, tomatoes, red onion, cheese, and a creamy avocado and parsley sauce. Serve immediately.
For the sauce:
In a blender or food processor, add all the ingredients and blend until smooth and homogeneous. Add water one tablespoon at a time until the desired consistency is reached.
