Caesar Salad with Bacon-Style Potato

Ingredients
For the salad:
1 romaine lettuce (or a mix of crisp lettuces)
½ cup of croutons
½ cup grated vegan parmesan or regular grated cheese
½ cup of Les Brutes plant-based bacon bits, lightly toasted
For the vegetarian Caesar dressing:
3 tablespoons of vegan mayonnaise
1 tablespoon of lemon juice
1 tablespoon of olive oil
1 tsp Dijon mustard
1 clove of garlic, pressed
1 tbsp nutritional yeast (optional, for a "cheesy" taste)
Salt and pepper to taste
Preparation
- Prepare the vinaigrette.
In a bowl, mix the mayonnaise, lemon juice, olive oil, mustard, garlic, and nutritional yeast.
Season with salt and pepper. Set aside.
2. Prepare the salad.
Wash and chop the lettuce. Put it in a large salad bowl.
3. Assemble.
Add the croutons and grated Parmesan cheese.
Pour the dressing over the leaves and mix well to coat them all.
4. Add the bacon crumbs.
Sprinkle Les Brutes vegetable bacon crumbs generously on top just before serving to keep it crispy.
